Sorbic acid and Potassium sorbate are the commonly used antiseptic agents in the international market. They have been described as the "Generally Recognized as Safe"brands food additives by American FDA and they also have been listed into the Application Hygienic Standard for the Food Additive of China GB2760－1996. The WHO Additive Committee's research has indicated that: people can safely absorb more amounts from the sorbic acid and potassium sorbate than from the vitamin C, therefore, it is one of the antiseptic agents which are allowed for use.
The sorbic acid and potassium sorbate have higher safety and stronger inhibiting capacity to the mould, their acute toxicity is just half of the salt's; and have not occur the phenomenons for causing cancer and malformation. In America, Japan, Europe and some developed developing countries and areas, they have substituted the sorbic acid and potassium for the sodium benzoate at the end of 1980's.
