Acesulfame-K

Acesulfame potassium is a calorie-free artificial sweetener, also known as Acesulfame K or Ace K.   Chemically, acesulfame potassium is the potassium salt of 6-methyl-1,2,3- oxathiazine-4(3H)-one 2,2-dioxide.  It is white crystalline powder with molecular formula of C4H4NO4KS and molecular weight of 201.24. 

Acesulfame K is 180-200 times sweeter than sucrose (table sugar), as sweet as aspartame or about half a sweet assaccharin. Like saccharin, it has a slightly bitter aftertaste, especially at high concentrations.   Alternatively, acesulfame K is often blended with aspartame or other sweeteners. These blends are reputed to give a more sugar-like taste where each sweetener masks the other's aftertaste, and to exhibit a synergistic effect wherein the blend is sweeter than its components. 

Unlike aspartame, acesulfame K is stable under heat, even under moderately acidic or basic conditions, allowing it to be used in baking, or in products that require a long shelf life.

Properties

Long-lasting stability:  no loss quality for 10 years during storage, not hygroscopic, high physical and chemical stablity even at 225℃ or the range of PH2-10, no interaction with other involved ingredients and additives.

Application

In food aspect, the Acesulfame-k has good stability and suitable taste , is the best sweeting agent for producing soft drinks, in addition, it also can be used in bakery products, pastry, solid drink, candy, jam, chewing gum, instant coffee, dairy products, jelly, pudding, sweeting agent and so on. 
In the medicine aspect, it is used in the syrup preparation, sugarcoated tablets, bitter medicine masking agent and so on; 
In the cosmetics aspect, it is used in the lipstick, toothpaste, gargle and so on.

To be used in the production on table-top sweeteners, instant beverages & soft drinks, fruit preserves, chewing gum, candies, confectionary, chocolate, bakery and pharmaceutical products.

Relative Sweetness : 200 times sweeter than sucrose in 3% solution
